My Favorite ‘Not Too Sweet’ Treat
This is my favorite muffin recipe. If you love cranberries as much as I do you need to give this a go. These are so good and easy to make. What I love is that they taste more like a savory bread than a typical sweet muffin. You can have them for breakfast or a midday snack with coffee or tea. I love to have them in the afternoon.
Ingredients:
- 2 cup unbleached flour
- 1/2 cup sugar
- 3 tsp. baking powder
- 1/2 tsp. baking soda
- 1 egg
- 1/3 cup vegetable oil
- 1 cup buttermilk
- 8 oz whole cranberry sauce
- 1/3 cup chopped walnuts
*You will also need muffin cups and a muffin tray. The Doughnuts and Squirrel Tea Towel was made by my awesome friend Lani. Best gift ever!
Makes 12 muffins or 18 mini muffins.
Directions:
- Preheat oven to 400 degrees.
- Measure dry ingredients into a mixing bowl & stir to blend.
- In a separate bowl, beat egg, blend in oil and buttermilk, mix well.
- Make a well in dry ingredients and pour in liquids. Stir light just until flour has almost disappeared.
- Fold in cranberry sauce and nuts. Do not over mix.
- Spoon mixture into muffin cups & bake for 25 minutes. Let cool and enjoy! I like mine with butter (insert Mean Girls reference here.)
